Juicy and tasty!

150g Shell steak and one marrow bone
Hot water bath for 8 hours at 50˚C
Internal temperature after bath 48.3˚C
Pre-heated medium hot cast iron pan
Steak patted dry and tossed in seasoned olive oil
Steak seared for one minute per side in hot pan together with extracted marrow
Internal temperature after 3 minute rest 56.6˚C

Evenly pink from inside almost to the crust
